Novel forms of cellulose are being developed for a diversity of uses including food and food packaging. Some of these forms might meet certain definitions of a nanomaterial, which raises the bar for safety demonstration in food related applications. This talk will discuss the state of knowledge for cellulosic materials with focus on novel forms, and present an analysis of different food related uses and needs for safety demonstration. The talk will highlight recent and ongoing work to demonstrate the safety of these materials in food related applications.
