Water-Soluble Nanoparticles Containing Water-Insoluble Compounds

Abstract: This technology can be used to create water-dispersible nanoparticles with entrapped water-insoluble compounds. Entrapped compounds may include pharmaceutically-active compounds or natural colorants. Experiments with beta carotene have shown a plausible way to increase the amount of healthy, natural colorants in water-based products, such as juice and ice cream.
